Author’s Notes
When Caesar Salad Met Pasta Salad
I make a lot of pasta salads, so when I say this Chicken Caesar Pasta Salad is one of the best you’ll find, I mean it.
It takes the favorite elements of a Caesar — crisp romaine, creamy dressing, salty Parmesan, and savory chicken — and tosses them with tender pasta and crunchy croutons.
Fresh, filling, and full of flavor, this pasta salad is ideal for BBQs, picnics, or quick weeknight dinners.
Ingredients
| Ingredient | Quick Tip / Swap |
|---|---|
| Pasta | Choose short shapes with ridges so the dressing clings. |
| Romaine Lettuce | Dry thoroughly so the salad stays crisp and not watery. |
| Chicken | Grilled breast or rotisserie chicken works well. Cut into small pieces to distribute evenly. |
| Mayo | Use a mayonnaise you enjoy — it influences the dressing flavor. |
| Anchovy Paste | Adds classic Caesar umami without a fishy taste — don’t skip if you can tolerate it. |

Caesar Salad Pasta Salad Tips
- Make the dressing ahead and chill it — the flavors deepen when it rests.
- Salt the pasta water for better overall seasoning.
- Cool the pasta completely before adding lettuce to prevent wilting.
- Dry the lettuce well so it holds the dressing rather than becoming soggy.
- Make homemade croutons if you have time — they add superior crunch and flavor.
Storage
Once combined, this salad is best served immediately. To prepare ahead, store the pasta, chicken, lettuce, and dressing separately in the refrigerator and combine just before serving. Add croutons at the end to keep them crisp.
