Cheesy Monaco Bites are a quick, simple and delicious starter that will impress family and friends. Easy to assemble and ready in about 15 minutes, they’re a great party appetizer and a fun activity to do with children.

These bites use Monaco biscuits as the base, topped with a warm, cheesy vegetable mixture. The salty crunch of the biscuit paired with a creamy, pizza-flavored topping makes them irresistible to kids and adults alike.
The topping is seasoned with pizza-style flavors — dried oregano, pizza sauce, paprika and chilli flakes — built on a simple white sauce (a basic roux with milk) to create a smooth, spoonable topping. You can use a homemade pizza sauce or a store-bought one depending on time and preference.

These Monaco Cheesy Bites are perfect when you need a quick snack or a last-minute party starter. The topping can be prepared ahead of time and spooned on the biscuits just before serving so they stay crisp. They’re also a fun way to use leftover veg or to let guests assemble their own bites.

Why this recipe works
- Super quick and easy to prepare — about 15 minutes from start to finish.
- Kid-friendly: salty biscuit plus cheesy veggie topping is a crowd-pleaser.
- Flexible: change vegetables and seasonings to suit your family’s tastes.
- Make-ahead friendly: prepare the topping in advance and assemble just before serving.
The base for the topping is a simple white sauce (roux + milk), which gives it a creamy texture similar to many pasta fillings and pie toppings. Adjust spices and consistency with a little extra milk so the topping remains easy to spoon.
Cheesy Monaco Bites — Recipe
Summary: A quick, vegetable-loaded cheesy topping spooned onto salted Monaco biscuits. Makes about 25 bites.
Prep time: 2 minutes • Cook time: 15 minutes • Total time: 17 minutes • Servings: 25 biscuits
Ingredients
- 2 tbsp butter
- 1 cup mixed veggies (carrot, peas and corn) — frozen or fresh
- 3 tbsp maida / all-purpose flour
- 1/3 cup milk, plus extra to adjust consistency
- 1 tsp dried oregano
- 2 tbsp pizza sauce
- 1/2 tsp paprika powder (or chilli powder to taste)
- 2 tbsp chopped roasted almonds (optional)
- 1/4 cup grated cheese
- Chilli flakes, to taste
- Mint leaves or farsan to garnish
- 25–30 Monaco biscuits
- 5 cheese slices, quartered
Instructions
- Heat the butter in a pan over medium heat. Add the mixed vegetables and cook until tender, about 2–3 minutes.
- Add the flour and stir continuously for about 2 minutes to cook off the raw flour taste.
- Gradually add the milk while stirring; the mixture will thicken to form a smooth white sauce.
- Turn off the heat and stir in the dried oregano, pizza sauce, paprika and chopped almonds. Mix well.
- Add the grated cheese and stir until melted and combined. Taste and add chilli flakes if desired. If the mixture is too thick, add a little milk to achieve a spoonable consistency.
- Let the topping cool slightly, then transfer to a bowl for assembly.
To assemble
- Place a Monaco biscuit on a serving plate. Top it with a quartered piece of cheese slice.
- Spoon a small amount of the prepared veggie-cheese topping over the cheese.
- Garnish with a mint leaf or a pinch of farsan and serve immediately with ketchup or chutney, if you like.

Notes
- Refer to the video recipe for a visual walkthrough if needed.
- Frozen vegetables work well, but fresh veg can also be used. Other combinations—boiled potato and paneer with mint chutney, or onion and capsicum with a dip—work nicely.
- Omit or reduce added salt since the cheese and salted biscuit already contribute saltiness.
- Assemble biscuits just before serving to prevent sogginess; you can let guests build their own bites.
- Leftover topping is great used as a sandwich filling or pasta sauce the next day.
