Ingredients

  • 2 cups uncooked pasta (fusilli bucati or rotini)
  • 4 cups chopped romaine lettuce
  • 1 cup chopped cooked chicken (see note)
  • Croutons optional, for topping
  • Parmesan cheese optional, for topping
  • 1 batch Caesar salad dressing see dressing recipe

Instructions

  • Make the Caesar dressing and chill it while you prepare the rest of the salad.
  • Bring 8 cups of water to a boil. Add 2 teaspoons salt and the pasta. Cook according to package directions. Drain, rinse briefly under cold water, and let the pasta cool completely.
  • Chop romaine into roughly 1-inch pieces. In a large bowl, combine the cooled pasta, lettuce, and chopped chicken. Add dressing to taste (you may not need all of it) and toss to coat. Top with croutons and freshly grated Parmesan if desired. Serve immediately.
