Ingredients

  • ¼ cup coconut flour
  • ¼ cup unsalted butter, softened
  • 3 medium eggs
  • ¼ cup erythritol (or preferred low‑carb sweetener)
  • ¼ cup unsweetened cocoa powder
  • 3 tablespoons coconut milk
  • ½ teaspoon cayenne pepper (adjust to taste)
  • ¼ teaspoon ground cinnamon
  • ¼ cup water
  • ¼ teaspoon salt
  • ½ teaspoon baking powder

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, cream the softened butter with the erythritol until smooth and well combined.
  3. Add the eggs one at a time, beating after each addition until the mixture is combined.
  4. Stir in the coconut flour, cocoa powder, baking powder, cinnamon, cayenne pepper and salt. Mix thoroughly to remove any lumps.
  5. Add the coconut milk and water, stirring until the batter is smooth. The batter should be pourable but slightly thick; adjust water if needed.
  6. Spoon the batter into a greased mini muffin tin, filling each cup almost to the top.
  7. Bake for about 15 minutes, or until the cupcakes are set and a toothpick inserted into the center comes out clean.
  8. Allow to cool in the tin for a few minutes, then transfer to a wire rack to cool completely before frosting or serving.
