I usually plan our weekly menu, though I’ll admit I’ve been slacking the past month. My recipe journal has also taken a back seat—too many daily demands, I suppose. To keep myself accountable, I’m joining Menu Plan Monday again. If you’d like to try any of these dishes, the recipes are worth checking out. A little accountability and shared meals can be a win/win.
Here’s what we’ll be eating this week:
Monday: Pasta with Pesto – A simple favorite I learned from our CSA farmer. It’s fresh, quick, and even the toddler loves it—garlic breath and all.
Tuesday: Orange-Apricot Pork Chops in the CrockPot – I haven’t tried this recipe yet, but I enjoy using Crock-Pot recipes from this source and expect it to be flavorful and easy.
Wednesday: Bubble Pizza – Another kid favorite. I intended to share this recipe in my journal but didn’t get around to it; I’ll try to post it this week.
Thursday: Tacos – Always an easy, beloved option. I also enjoy the leftover taco salad for lunch the next day.
Friday: Dinner out.
Saturday: Mongolian Beef (CrockPot) – A new recipe for the week that promises easy preparation and big flavor.
Planning meals ahead helps simplify the week and reduces stress. Even when life gets busy and the routine slips, a short menu like this keeps dinners manageable and enjoyable. If you have easy family favorites or crock-pot recommendations, I’d love to hear them.
