INGREDIENTS:

  • 2 cups old fashioned oatmeal
  • cup slivered almonds
  • cup macadamia nuts roughly chopped
  • 1 cup shredded sweetened coconut
  • ½ cup toasted wheat germ
  • 2 tablespoons unsalted butter
  • cup honey
  • cup organic almond butter
  • ¼ cup light brown sugar packed
  • 1 teaspoon coconut extract
  • ¼ teaspoon kosher salt
  • ½ cup dried pineapple chopped
  • ½ cup dried cranberries

DIRECTIONS:

  • Preheat the oven to 350 degrees. Line an 8×12 baking pan with parchment paper.
  • Combine the oatmeal, coconut, almonds, and macadamia nuts on a sheet pan. Bake for 10 minutes, or until lightly toasted. Transfer the mixture to a large mixing bowl, add the wheat germ, and toss to combine.
