Ingredients

  • 2 tbsp butter

  • 1/2 lb potatoes, peeled and cubed (about 1/2 inch)
  • 1/2 lb dried macaroni
  • 1/3 lb grated Gruyère
  • 1/2 cup cream
  • 1/3 cup white wine (optional)
  • Salt and ground black pepper, to taste
  • 1 tbsp fresh parsley, chopped
  • Applesauce, for serving

Instructions

  1. Heat the butter in a medium saucepan over medium heat until lightly browned.
  2. Add the onion and cook for about 5 minutes, then season with a pinch of salt and continue until browned.
  3. Bring a large pot of water to a boil and add a generous pinch of salt.
  4. Add the potatoes and cook for 5 minutes.
  5. Add the pasta and cook according to package instructions, subtracting one minute to prevent overcooking in the oven.
  6. Preheat the oven to 375°F (190°C).
  7. Drain the pasta and potatoes and rinse briefly under cold water to stop cooking.
  8. Mix the pasta and potatoes with the cream, salt and pepper (and wine if using).
  9. Layer the mixture and grated cheese in three parts in a baking dish, finishing with cheese and topping with the caramelized onions.
  10. Bake 15–20 minutes until the cheese is melted and the top is lightly golden.
  11. Remove from the oven, sprinkle with parsley and serve with applesauce.
