
My mother was an English teacher, and some of my fondest childhood memories involve the walk home from school together. She worked at the middle school while my brother and I attended primary school, so we often headed home as a group. After school she usually prepared a homemade snack, and occasionally we got a special treat: strawberry-flavored milk from a carton. Back then it tasted amazing, even though the flavor was artificial. These days I prefer the real thing—fresh strawberries make a far better strawberry milk than anything artificial.

If you think strawberry milk is only for kids, think again. I’m in my twenties and I still love it. This version feels indulgent but is actually simple and light—mostly strawberries and almond milk—making it a perfect healthy summer drink. It’s quick to prepare, naturally sweet when ripe berries are used, and easy to adjust to your taste.

– 300 g fresh strawberries
hulled and halved (weighed after hulling) -

honey
or pure maple syrup -

pure vanilla extract -

unsweetened almond milk
You can use dairy milk or another non-dairy alternative if you prefer.
Instructions

Preheat the oven to 360°F (180°C).

In a bowl, combine the hulled strawberries with the honey or maple syrup and vanilla extract. Toss to coat, then spread the berries and their juices evenly on a baking sheet. Roast for about 10 minutes, then remove and let cool briefly.

Place the roasted strawberries and any juices into a blender. Add the almond milk and blend until completely smooth. Taste and add a touch more honey or maple syrup if you prefer it sweeter.

Pour into two glasses (or one large glass) and chill in the refrigerator until cold. Serve over ice if desired.
