My mother was an English teacher, and some of my fondest childhood memories involve the walk home from school together. She worked at the middle school while my brother and I attended primary school, so we often headed home as a group. After school she usually prepared a homemade snack, and occasionally we got a special treat: strawberry-flavored milk from a carton. Ingredients

    oz
    – 300 g fresh strawberries
    hulled and halved (weighed after hulling)
  • 1
    tbsp
    honey
    or pure maple syrup
  • 1
    tsp
    pure vanilla extract
  • 1
    cup
    unsweetened almond milk
    You can use dairy milk or another non-dairy alternative if you prefer.

Instructions

  1. Preheat the oven to 360°F (180°C).
  2. In a bowl, combine the hulled strawberries with the honey or maple syrup and vanilla extract. Toss to coat, then spread the berries and their juices evenly on a baking sheet. Roast for about 10 minutes, then remove and let cool briefly.
  3. Place the roasted strawberries and any juices into a blender. Add the almond milk and blend until completely smooth. Taste and add a touch more honey or maple syrup if you prefer it sweeter.
  4. Pour into two glasses (or one large glass) and chill in the refrigerator until cold. Serve over ice if desired.
