Spinach and Canadian Bacon Brunch Wraps with Greek Yogurt Spread

  • Whole grain flax wrap or your preferred tortilla (choose lower-calorie or low-carb options if desired)
  • 1 onion, chopped
  • 6 oz Canadian bacon, chopped (about 12 slices)
  • 4 whole eggs, whisked
  • 1 cup egg whites (or substitute with more whole eggs if preferred)
  • 8 oz fresh spinach
  • 4 oz reduced-fat cheddar cheese, shredded (about 1 oz per wrap)
  • 2 scallions, chopped
  • 1/2 tsp kosher salt and fresh cracked pepper, to taste

Directions

  1. Chop the onion and the Canadian bacon.
  2. Heat a frying pan over medium heat and add a light spray of olive oil or non-stick spray. Add the chopped onion and Canadian bacon, season with kosher salt and pepper, and cook for about 8–10 minutes until the onion is tender and beginning to caramelize and the Canadian bacon gets a little color. (The Canadian bacon is already cooked; you’re just heating and browning it.)
  3. Whisk the eggs in a bowl. Pour the whisked eggs and the egg whites into the pan with the onion and Canadian bacon. Cook for 1–2 minutes, stirring to combine.
  4. Add the fresh spinach and cover the pan to help the spinach wilt. Cook until the eggs are fully set and the spinach has wilted. Fold in the chopped scallions.
  5. Lay out the wraps and divide the scramble evenly, adding about 1 cup of scramble to each wrap. Sprinkle 1 ounce of shredded cheese over the filling in each wrap.
  6. Fold or roll the wraps, then toast them on a preheated griddle or skillet over medium heat for a couple of minutes per side until golden and slightly crisp. If you prefer, you can crisp them in the same pan used for the scramble—wipe it clean first to avoid sticking.

Storage and reheating

These wraps are excellent for meal prep and freeze well. To store: wrap each portion in foil and freeze. To defrost, unwrap and microwave briefly until no longer cold. For a crisp finish, air fry at 400°F for a few minutes to restore crunch. Alternatively, reheat in a toaster oven or convection oven at a high temperature for a few minutes.
