High Protein Smash Burger Tacos (Meal Prep)
These high-protein smash burger tacos are crispy, cheesy and loaded with fresh toppings. Each mini tortilla is pan-seared with a thin layer of seasoned beef that crisps around the edges and melts into the cheese. Finished with shredded lettuce, diced onion, pickles and a tangy high-protein burger sauce, these tacos are ideal for meal prep and reheat well when stored correctly so they stay crisp.

Ingredients
Beef Smash
- 900g (1.9lb) – Lean Beef Mince
- 2 tsp (8g) – Onion Powder
- 2 tsp (8g) – Garlic Powder
- 1 tsp (4g) – Smoked Paprika
- 10 – Mini Flour Tortillas
- 10 – Light Cheese Slices
- Salt & Pepper
Toppings
- 120g (4.2oz) – Lettuce, Shredded
- 1 – White or Brown Onion, Diced
- 2 – Dill Pickles, Diced
High-Protein Burger Sauce
- 150g (5.3oz) – High Protein Yogurt
- 2 Tbsp (40g) – Light Mayonnaise
- 1 Tbsp (20g) – Tomato Ketchup
- 2 tsp (20g) – Yellow (American) Mustard
- 1 tsp (5ml) – Pickle Juice
- 1 tsp (4g) – Garlic Powder
- 1 tsp (4g) – Smoked Paprika
- Salt & Pepper
Instructions
Make the Sauce
- Combine high-protein yogurt, light mayonnaise, ketchup, mustard, pickle juice, garlic powder, smoked paprika, salt and pepper in a bowl. Whisk until smooth, then transfer to a bottle or container and refrigerate until serving.
Season the Beef
- In a large bowl, mix the beef mince with garlic powder, onion powder and smoked paprika. Season with salt and pepper and mix gently—do not overwork the meat.
Lay Out the Tortillas
- Arrange all 10 tortillas on a clean surface or board.
Portion and Spread the Beef
- Divide the mince into 10 equal portions. Place one portion on each tortilla and spread it thinly and evenly to the edges (a small lip is fine). Keeping it thin ensures the beef crisps and adheres to the tortilla during cooking.
Cook
- Heat a large non-stick or cast-iron pan over medium-high. Lightly oil or spray the pan and place the assembled tacos beef-side down. Cook for 2–3 minutes until the beef is browned and the edges are crisp and firmly attached to the tortilla.
Flip and Add Cheese
- Flip so the tortilla contacts the pan. Immediately place a slice of light cheese over the beef. Cook about 1 minute until the cheese melts and the tortilla turns golden and lightly toasted. Remove and repeat with remaining tacos.
Build the Tacos
- Top each taco with shredded lettuce, diced onion, diced pickles and a drizzle of the high-protein burger sauce. Serve immediately while crisp.

Storage Instructions
Store the cooked tacos separately from the fresh toppings to preserve texture. Reheating Instructions
Reheat the tacos using your preferred method:
- Pan: 1–2 minutes over medium heat to restore crispness.
- Air Fryer: 2–3 minutes at 180°C (350°F) until hot and crispy.
- Oven: 5–7 minutes at 180°C (350°F).
- Microwave (last resort): 30–45 seconds — they won’t be as crisp, but will still taste good.
