Beautiful Beet Hummus
We’re a small startup and often shoot in friends’ homes—then happily sample the results. While photographing at Zoe Armbruster’s bright, comfortable San Francisco flat, we discovered this gorgeous gluten-free, dairy-free beet hummus. Zoe, a relaxed and naturally stylish photographer and food stylist, created the recipe, and it’s as effortless and delightful as she is.

lemon

tahini -

extra-virgin olive oil -

chopped pistachios - Kosher salt and freshly ground pepper
Instructions

Preheat the oven to 375°F. Trim stems and roots from the beets. Wrap each beet in foil with a small drizzle of olive oil and roast until tender when pierced with a knife, about 50 minutes or longer for larger beets. Allow the beets to cool, then quarter them and place in a food processor.

Add the drained chickpeas, lemon juice and zest, minced garlic, tahini, and olive oil to the food processor. Blend until smooth, stopping to scrape down the sides as needed. Taste and season with kosher salt and freshly ground pepper. If the hummus seems thick or you prefer a brighter flavor, add a little more olive oil or lemon juice and blend again.

When ready to serve, transfer the hummus to a bowl and garnish with chopped dill and pistachios. Serve at room temperature or chilled with warm pita, crackers, or fresh vegetables.
